Easy Breakfast Egg Bake

My lifesaver
The past 3 weeks Brian has been out of town for most of the
week. Trying to get out of the house and get Gray ready meant that I didn’t
have much time for me in the morning. So I made this the first week and it has
become my life saver. Brian even had some on Monday last week before leaving
us.
Easy Breakfast Egg Bake
I pretty much just clean out my fridge of whatever I think
would be good in eggs.
This one is green pepper, cherry tomatoes, asparagus and
some chicken that we had leftover. And then the glutton in me added the last
bit of goats cheese in the fridge too. And a bit of basil for some more
flavour.
Then 6 eggs plus enough milk to be about 2 ½ cups. Pour it
over the mix and pop it in the oven.
Bake at 350 for about 45 minutes.
And voila!
I have taken this for breakfast every day for the past 3
weeks. Sometimes with ham and bacon, sometimes with different veg depending on
what we had.
Taking the few minutes it took to prep this saved me a huge
headache each morning this week. I knew that all I had to do was grab my
breakfast out of the fridge each day and then heat it up at work.
